Well, to tell us we have the actual World Champion in the International Sausage Olympics, Jim Murphy from Murphyโs butchers, of Tullow, in Carlow, who won the competition in Sacramento, California, in the face of intense international competition. Jim will be joined by another sausage maestro, Jess Kelly of Dublinโs The Village Butcher, the new face of Irish artisan charcuterie and meat retailing.
