Hollow Leg Wines are the product of Wine Lab, consistently one of the most imaginative of Irish wine brands. The wines are made by Spanish winemaker Pablo Martinez, and have won global acclaim for their expertise. Majken Bech-Bailey won 2 Michelin stars alongside her husband, chef Jordan Bailey, at Aimsir Restaurant, and the couple now run the Bech-Bailey consultancy and events catering company.
